CRG is committed to creating next-generation restaurants that bring the creativity, style and quality of chef-driven urban dining to suburban, small city and underserved urban communities. Warm, family friendly and accessible, each restaurant will be conceptually customized to their community in terms of cuisine, design and experience. Our Chefs and General Managers will be equity partners, operating the restaurants independently, but with the support and guidance of subject matter experts in Operations, Marketing, Finance and Human Resources. Following the post-COVID demographic shifts, we will bring great dining to former city dwellers in their new hometowns.
The goal of our business is simple: we wish to create community gathering places, passionately celebrating the local flavor and soul of neighborhoods.

Twenty-five miles north of Chicago, Highland Park is one of the wealthiest suburbs in the United States. A town of 30,000 located on Lake Michigan., Highland Park is a family oriented and highly educated community (over 75% of adults have a college degree). It is affluent, with an average income of $232,000 per family and a median home listing price of $995,00. The surrounding communities share its affluence; within three miles of Highland Park are the communities of Winnetka, Glencoe, Lake Forest, Deerfield, and Northbrook. Within 5 miles is a population of 104,000 with 38% of homes considered to be “high-income households.”
Our restaurant is in the “Ravinia” neighborhood, with its own commuter rail station. The Ravinia Festival begins each April and lasts through early fall, with over 100 musical events from headliners to classical, jazz, world music, etc. Our restaurant, with its large outdoor dining area, will literally double in size during the festival’s warmer months.
With an amazing street presence in the center of Highland Park’s Ravinia district, our restaurant will be led by an innovative James Beard Award-winning chef and a strong Chicago General Manager. Open for lunch on weekdays (in the warmer months), dinner 7 nights a week, and brunch on weekends, the restaurant will be built in a 4,200 square foot former dry cleaner’s shop that uniquely runs at an angle to Roger Williams Avenue. The brick building will have trusted, vaulted 16-foot ceilings. The current parking lot, also on road frontage, will be converted to a large outdoor dining area to operate seasonally. The side of the restaurant facing the patio will be opened with windows to create a light-filled space. The restaurant will seat approximately 100 in the dining room, 20 at the bar and an additional 90 on the patio.
The Design will mirror the qualities of the menu. It will be a balance of whimsy and warmth, comfortable and friendly but with a slight edge. More vibrant than a typical North Shore restaurant, but family friendly of course, our Ravinia restaurant will have a fun vibe grounded by creative dining and great service.

On the Garden Island of Kauai, next to well established tourist destination (over 4,000 units) of Po’ipu is the new community of Kukui’ula. Homes in Kukui’ula range from $2.5 to $20 million. The commercial center of Kukui’ula is a lifestyle center with multiple restaurants and shops; 70% of their sales are to tourists, 30% to locals. All of the restaurants are local…there are no chain restaurants present. Currently, there is a wide gap between 3 fast casual restaurants and 3 upscale restaurants with average checks in the $90 per person range. Our project site is the 2,800 square foot ground floor space released by one of the upscale restaurants (located on the floor above). Seating 90 indoors and 40 outdoors, our concept is an elevated classic Hawaiian “ranch style” or “paniolo” cuisine focused on pork, chicken and beef cooked on rotisserie but with modern sides prepared with local produce and bright, tropical finishes. The bar would favor Hawaiian-made liquors and beers and the wine list would be small. This restaurant would serve br/lunch and dinner 7 days a week and be the restaurant visitors will eat at TWICE during their stays.

Just west of Chicago, Oak Park is one of the city’s first suburbs. Oak Park was home to Franklin Lloyd Wright in his early years and with neighboring River Forest, has many FLW homes. Oak Park is diverse, attracting first buyer millennials, a town with a progressive, boho style and foodie passion. Think Berkeley, California just before Chez Panisse happened. Our project site is on the main commercial street, a second-generation restaurant space of nearly 6,000 square feet just blocks from the train and subway stations and a landmark theater. We estimate seating at 160 indoors and 20 outdoors. We plan to develop an elevated, sophisticated yet friendly and warm Southern restaurant with a large bar that will become the center of this creative community.
